Swiss Miss® Pancakes

YIELD: 10 portions

PORTION: 1 – 5″ pancake

 

INGREDIENTS:

1 c. 2% Milk

4 tbsp. Butter, unsalted

2 Eggs

1 tbsp. Vanilla Extract

1-1/4 c. All-Purpose Flour

4 tsp. Granulated Sugar

4 tsp. Baking Powder

¾ tsp. Salt

4 oz. (4 env.) Swiss Miss® Regular Hot Chocolate Mix

1 Banana, small, diced

Reddi-wip® Real Cream Whipped Topping

DIRECTIONS:

  1. Heat milk and butter just until the butter has melted. Set aside and cool. Mix eggs and vanilla into cooled mixture.
  2. Sift flour, sugar, baking powder, salt and Hot Chocolate Mix together into a bowl, incorporating thoroughly.
  3. Mix dry ingredients into wet ingredients and stir until just incorporated (batter should be slightly lumpy). Fold diced banana into mixture.
  4. Pour batter onto hot griddle or frying pan and cook until golden brown.
  5. Serve topped with Reddi-wip® Real Cream Whipped Topping.

Serving Suggestion: Serve 2 pancakes with chocolate chips, bananas, or custard in between.
