YIELD: 15 4-oz. portions
8 oz. Swiss Miss® Regular Hot Chocolate, prepared/chilled as below
4 c. 2% Milk
1 Cinnamon Stick
1 tbsp. Vanilla Extract
1 c. Granulated Sugar
7 Whole Eggs
2 Egg Yolks
Prepare Hot Chocolate in advance with 6 oz. hot water to every 2 oz. Hot Chocolate Mix and chill.
Heat oven to 350°F. Bring milk to a simmer and steep the cinnamon and vanilla extract for 5 minutes. Remove cinnamon stick from milk and add prepared Hot Chocolate; blend well.
Mix the sugar with the whole eggs and egg yolks. Temper the egg mixture into the hot milk.
Pour the liquid into 15 4-oz. ramekins. Place ramekins into large cake pan or roasting pan. Pour hot water into pan to come halfway up sides of ramekins. Bake until the flan is just set, approximately 40-45 minutes.
